Lettuce wraps are healthy and delicious. They can also be very versatile as you can use different proteins as your base: ground pork, chicken or turkey, or tofu.
I used turkey tonight. Usually I do pork but I wanted to experiment.
- 1 lb ground turkey/pork or chicken
- 1 can of sliced water chestnuts
- 1/2 cup diced carrot
- 1/2 cup diced red onion
- 1/3 cup chives
- 3 tablespoons hoisin sauce
- 2 tablespoon minced garlic
- 1 tablespoon peanut butter
- 1 tablespoon sesame oil
- 1 tablespoon reduced sodium soy sauce
- 1 tablespoon ginger
- 1 tablespoon Sriracha sauce
- A head of bibb or butter leaf lettuce
Saute your protein in your skillet until mostly done, then add your vegetables.
Cook for 2 to 3 minutes until your veggies start to become opaque. Then add the rest of the ingredients, excluding the lettuce and chives. Allow to blend together, stirring, for 5-10 minutes. Serve.
