Black Bean and Mango Salsa

  • 1 can black beans, rinsed
  • 1 ripe mango, peeled and diced
  • 1 cup corn (frozen, rinsed)
  • 1 jalapeno pepper, diced
  • ½ cup chopped red onion
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon minced garlic
  • 1 lime, juiced
  • 1/8 teaspoon cumin

Blend all the ingredients together in a small bowl and refrigerate for at least 1 hour.  I recommend serving this over grilled chicken or pork. Or you can serve with plantain chips for a dip.
