- 2 cups mixed greens
- 1 mango, diced
- 1 cup rinsed black beans
- 1\2 cup corn, sliced off the cob or frozen
- 1\4 diced red onions
- 1\4 cup shredded jack cheese
Salsa Verde Vinaigrette
- 1\4 cup of your favorite salsa verde (I use Herdez)
- 1\4 cup olive oil
- 1\4 cup diced cilantro
- 3 tablespoons honey
- 1 tablespoon minced garlic
Make the dressing about an hour ahead of time to allow it to chill in the refrigerator.
