Mango, Corn and Black Bean Salad with Verde Vinaigrette

  • 2 cups mixed greens
  • 1 mango, diced
  • 1 cup rinsed black beans
  • 1\2 cup corn, sliced off the cob or frozen
  • 1\4 diced red onions
  • 1\4 cup shredded jack cheese

Salsa Verde Vinaigrette

  • 1\4 cup of your favorite salsa verde (I use Herdez)
  • 1\4 cup olive oil
  • 1\4 cup diced cilantro
  • 3 tablespoons honey
  • 1 tablespoon minced garlic

Make the dressing about an hour ahead of time to allow it to chill in the refrigerator.
