This was a quick meal idea tonight. I had some pie crusts I needed to use up and some ground beef. I started with the salad and then just kept adding things to my dinner plan.
- 1 box Pillsbury refrigerated pie crusts
- 1 lb lean ground beef
- 1 cup shredded jack cheese
- 1\2 cup diced red onion
- 1 can adobo chilis in can
- 1\4 cup olive oil
- 1\4 cup cilantro, diced
- 1\4 cup egg whites
- 2 tablespoons cumin
- 2 tablespoon minced garlic
Preheat Oven to 400 degrees.
In a blender of food processor blend oil, chilis, and spices. Set aside.
Brown beef with the onions. Once beef is cooked, add in your blended sauce. Allow to simmer for 5 minutes.
Roll out your dough and cut into circles. I like to use a large mason jar and go around it. Dip two tablespoons of your beef mixture, top with cheese. Then fold them over, pinch together and use a fork to ‘seal’ the edges. Brush with your egg whites and bake for 15-20 minutes. Depending on your oven.
I mix some extra cilantro into greek yogurt for a healthy ‘dip’.
