- 1 package boneless chicken breast
- 1 cup chicken stock
- 1\2 cup sour cream
- 1\2 cup bleu cheese crumbles
- 1\2 cup dried cranberries
- sea salt
- cracked pepper
- dried thyme
- garlic powder
Preheat Oven to 425. Place chicken in shallow baking dish and lightly coat both sides with your sea salt, cracked pepper, thyme and garlic powder.
Bake for 30-40 minutes until tops of chicken breasts begin to brown. You may need to hit them on broil for a minute or two.
For the sauce: In a small sauce pan bring your stock to a boil. Reduce the heat and whisk in your sour cream until the sauce gets smooth. Next add your bleu cheese crumbles, bring to a simmer for 3-5 minutes, stirring constantly. Last add in your cranberries, stir, remove from heat and allow to sit for five minutes, letting the sauce thicken.
