Mango Slaw

  • 1 cup prepacked cole slaw mix
  • 1\4 cup minced onions
  • 1 mango, diced fine
  • 2 tablespoons nonfat plain greek yogurt
  • 1\4 cup diced cilantro
  • 1 lime, juiced
  • 2 tablespoons white wine vinegar

Blend it all together and chill.  Serve over shredded chicken tacos.  I like to buy a rotisserie chicken, premade.  Pull the meat.  Add in a can of crushed tomatoes and a can of chipolte peppers in abodo sauce.  (I toss the two things in a blender and pulse for about 20 seconds).  Let the chicken simmer for about 30 minutes.  Serve over tortillas.
