- 1 package of pork chops
- 1 red onion
- 1\2 cup orange marmalade
- 1 package condensed chicken broth
- 1\2 stick butter
- 3 tablespoons balsamic vinegar
- 1 tablespoon minced garlic
- 1 tablespoon sliced ginger
- 2 dashes crushed red pepper
- salt\pepper
- Chopped fresh rosemary
Slice your red onion and saute over medium high in butter until it starts to caramelize. Salt and pepper the onions lightly. They will get a nice golden color after about 15 minutes. Stir often.
Add in your condensed broth, balsamic vinegar. garlic and ginger. Allow to cook together for another five minutes. Then add your marmalade, rosemary and crushed red pepper. Stir well and allow to simmer, stirring often, while your pork cooks.
You can grill or bake your pork. I grilled mine. Lightly salt and pepper both sides.
Serve over wild rice or couscous.
