- 1 package brussel sprouts
- 1\2 cup diced red onion
- 1\2 cup pancetta or diced bacon
- 1\3 cup blueberries
- 1\3 cup crumbled blue cheese
- 1\4 cup maple syrup
- 2 tablespoons olive oil
Preheat oven to 425. In a cast iron skillet place brussel sprouts that have been cut in half. Coat with oil and crack fresh pepper and sea salt on them. Just lightly covering them with the salt and pepper. Roast for 15 minutes.
Remove from oven and add your pancetta (or bacon) and onions. Return to oven to roast for another 15 minutes.
Add your blue cheese. Stir and serve.
