- 1 cup frozen corn, thawed
- 1 cup shelled edamame
- 1\2 cup dried cranberries
- 1\4 cup diced red onion
- 1 cup fresh mozzarella (packed in oil, sliced in halves)
- 2 tablespoons balsamic glaze
- 1 tablespoon olive oil
- cracked sea salt/pepper
Place in a large bowl, blend together. Serve immediately or refrigerate.
